Well the first thing that came to mind, although a bit of a stretch [hide] was writing. Using poetic licentiousness the letters of the alphabet might be described as poles and plates et. al.[/hide]

But, then maryl gives us the skinny doctor clue, which made me think of [hide] bones[/hide] which is the real McCoy ;D
But, is probably not the right answer.

This is probably not the answer, but it fits fairly well:  all those terms are related to golf. Twigs is slang for clubs. Spheres is the balls. The flags in the holes are on poles. Disks in the ground (often in the teeing area) to indicate yardage are called plates. This even fits the later clue: doctors love to play golf.
